“Spiny Lobster with Love”, Authentic Cuisine in Da Nang French Restaurant

At Cabanon Palace, Chef Hélio shares traditional family recipes passed down through generations. The Spiny Lobster at l’Américaine is one of the highlights. Whole spiny lobster flambéed with Cognac, cooked in a rich bisque with chili and garlic, and served with squid ink pasta. His grandmother Mamie Zézette, who was a favorite at family reunions, often cooked this dish, especially for New Year celebrations. As a result, we honor French culinary traditions while providing a Mediterranean dining experience in Da Nang.

“La Langouste à l’américaine” has been created by Chef Pierre Fraysse from Sète, who, after working at the Café Américain in Chicago, opened his successful restaurant, Chez Peter’s, in Paris in 1854. He developed this recipe in 1860. In 1938, the Larousse Gastronomique mistakenly published the recipe as ‘La Langouste à l’armoricaine,’ and since then, it has become part of French culinary history.
